
baked potatoes
( Patate al forno – Patati ‘Nfurnati )
Potatoes are one of the most versatile and employed food in all kinds of cooking styles.
The taste, the nutrition values, the ease of preparation and the price make the potato one of the most sought-after eatable foods, either as a snack, a condiment or at times, as a meal.
Potatoes simply boiled or baked, with or without condiment are whole and tasty; they are fulfilling, nourishing and healthful. Making the following recipe will result into a side dish that goes perfectly with any fare.
Ingredients
- 2 lb. of potatoes, peeled, sliced at about ½ inch and covered with cold water
½ cup of olive oil
2 medium onions, sliced
6 oz. grated pecorino cheese
¼ cup chopped parsley
salt and pepper
Instructions

- Drain the potatoes and pour into a large tureen; add ½ of the olive oil, onions, ½ of the cheese, parsley and salt and pepper to taste.
- Combine the ingredients well and transfer half of the mixture into an oiled medium size pan, sprinkle some cheese, pour the remaining potatoes and top with the remaining cheese and olive oil.
- Cover with aluminum foil and bake at 400F for 45 minutes and for an additional 15 minutes uncovered.
- Test if they are sufficiently cooked and if necessary bake the potatoes a few additional minutes
